Dhanduese Drums were a dish consisting of roasted, brown tip-yip drumsticks coated in a special spice rub made by the avian Dhanduese species and topped with a green garnish. The Artiodac chef Strono Tuggs made the dish after visiting the Dhanduese homeworld, the third moon of the planet Dhandu, during a culinary tour of the galaxy that he took[1] between 34 ABY and 35 ABY.[2]

Tuggs initially saw the Dhanduese as a potential ingredient before learning that they were sentient and so shared a meal with them instead. His hosts then gave him the spice rub that he would use on the drumsticks, and he later included the recipe for Dhanduese Drums in his third cookbook, The Ultimate Cookbook, which was published[1] in 35 ABY.[2] In the book, Tuggs called the drumsticks flavorful and said that they would always remind him of the Dhanduese, recommending readers serve the drumsticks on top of Pasaana Battercakes for a powerful flavor combination.[1]

Behind the scenes

Dhanduese Drums were created as a recipe for the 2023 Star Wars: The Ultimate Cookbook, a recipe book written by Jenn Fujikawa and Marc Sumerak with photography by Ted Thomas. The out-of-universe recipe for the dish makes use of drumsticks, cornstarch, chili powder, confectioners' sugar, cumin, curry powder, turmeric, coriander, garlic salt, kosher salt, white pepper, minced garlic cloves, minced ginger, olive oil, and minced green onions.[1]
