"So instead of makin' a meal out of the Dhanduese, I chose to share a meal with 'em instead. They turned out to be excellent hosts, and even gave me some of this special spice rub they make. I've been usin' it to roast up tip-yip drumsticks. Its high-flyin' flavors will fondly remind me of my new friends on Dhandu with every bite!"
―Strono Tuggs, The Ultimate Cookbook[1]

The Dhanduese species that lived on[1] Dhandu 3,[2] the third moon of the planet Dhandu, made a special spice rub for use in flavoring food. When the Artiodac chef Strono Tuggs visited the moon during a culinary tour of the galaxy that he took[1] between 34 ABY and 35 ABY,[3] he shared a meal with his Dhanduese hosts, who provided him with the spice mix. Tuggs later used it on tip-yip drumsticks and roasted them to make Dhanduese Drums, a dish that he included a recipe for in his third cookbook, The Ultimate Cookbook, which was published[1] in 35 ABY.[3]

Behind the scenes

The special spice rub was created as a recipe for the 2023 Star Wars: The Ultimate Cookbook, a recipe book written by Jenn Fujikawa and Marc Sumerak. The spices in the out-of-universe recipe for the dish consist of chili powder, cumin, curry powder, turmeric, and white pepper.[1]

  3. 3.0 3.1 Star Wars: The Ultimate Cookbook establishes that the publishing of the in-universe The Ultimate Cookbook and the culinary tour that preceded it occurred following the publishing of The Official Black Spire Outpost Cookbook and prior to the destruction of Kijimi. It also establishes that The Ultimate Cookbook was published following the Festival of the Ancestors that occurred during that time period. Star Wars: Galaxy's Edge: The Official Black Spire Outpost Cookbook further establishes that The Official Black Spire Outpost Cookbook was published concurrently with the First Order's search for the Resistance base on Batuu, which Star Wars: Timelines dates to 34 ABY. In addition, Timelines dates the Festival of the Ancestors and the destruction of Kijimi to 35 ABY, meaning the tour must have taken place between 34 ABY and 35 ABY and The Ultimate Cookbook must have been published in 35 ABY.
