- "After experimentin' a bit, I found that I preferred steamin' a pot of 'em and servin' 'em along with an entrée. It may seem on the simple side, but these grains are sure to fill you up fast while addin' a bit of vibrant color to any plate they're on."
- ―Strono Tuggs, The Ultimate Cookbook
Kerkoidia Grains was a vegetarian dish consisting of a bowl of steamed grains harvested from a grass that grew on the Expansion Region planet Kerkoidia. The grains were a vibrant blue and the dish was filling. The Artiodac chef Strono Tuggs created the dish after experimenting with different ways to cook the versatile grains during a culinary tour of the galaxy that he took[1] between 34 ABY and 35 ABY.[2]
Tuggs then included the recipe for the dish in his third cookbook, The Ultimate Cookbook, which was published[1] in 35 ABY.[2] In the book, Tuggs described the dish as simple and said he preferred serving it with an entrée. He also used Kerkoidia Grains as a component of Byblos Squares, another dish included in the book.[1]
Behind the scenes
Kerkoidia Grains was created as a recipe for the 2023 Star Wars: The Ultimate Cookbook, a recipe book written by Jenn Fujikawa and Marc Sumerak with photography by Ted Thomas. The out-of-universe recipe for the dish makes use of long-grained white rice, water, coconut milk, crushed stalks of lemongrass, a slice of ginger, bay leaves, peeled and smashed garlic cloves, butterfly pea flower tea, and kosher salt.[1]

- ↑ 2.0 2.1 Star Wars: The Ultimate Cookbook establishes that the publishing of the in-universe The Ultimate Cookbook and the culinary tour that preceded it occurred following the publishing of The Official Black Spire Outpost Cookbook and prior to the destruction of Kijimi. It also establishes that The Ultimate Cookbook was published following the Festival of the Ancestors that occurred during that time period. Star Wars: Galaxy's Edge: The Official Black Spire Outpost Cookbook further establishes that The Official Black Spire Outpost Cookbook was published concurrently with the First Order's search for the Resistance base on Batuu, which Star Wars: Timelines dates to 34 ABY. In addition, Timelines dates the Festival of the Ancestors and the destruction of Kijimi to 35 ABY, meaning the tour must have taken place between 34 ABY and 35 ABY and The Ultimate Cookbook must have been published in 35 ABY.
