"The fruit from his kand trees paired perfectly with Dorin zand nuts in this fragrant bread. You won't be able to resist its sweet aroma—and you won't even need a rebreather to enjoy it!"
―Strono Tuggs, The Ultimate Cookbook[1]

Kand and Zand Rolls were a type of fragrant, vegetarian bread with a sweet aroma. Brown in color with an uneven surface, the bread was made with zand nuts and the fruit of the kand tree, both of which were native to Dorin, the Expansion Region[1] homeworld of the Kel Dor species.[2]

During his culinary tour of the galaxy[1] between 34 ABY and 35 ABY,[3] the Artiodac chef Strono Tuggs visited a Kel Dor orchard owner on Dorin who had previously promised to provide the chef with goods from his orchard. Although surprised, the Kel Dor provided Tuggs with produce including zand nuts and kand tree fruit which the Artiodac then used to make Kand and Zand Rolls. He then included the recipe for the rolls in his third cookbook, The Ultimate Cookbook, which was published[1] in 35 ABY.[3] In the book, he promised readers that, unlike Dorin, the bread did not require them to wear a rebreather.[1]

Behind the scenes

Kand and Zand Rolls were created as a recipe for the 2023 Star Wars: The Ultimate Cookbook, a recipe book written by Jenn Fujikawa and Marc Sumerak with photography by Ted Thomas. The out-of-universe recipe for the bread makes use of dry yeast, warm milk, all-purpose flour, granulated sugar, cinnamon, kosher salt, allspice, a beaten egg, dried apricots, dried cranberry, chopped pecans, olive oil, and a large egg yolk.[1]

  3. 3.0 3.1 Star Wars: The Ultimate Cookbook establishes that the publishing of the in-universe The Ultimate Cookbook and the culinary tour that preceded it occurred following the publishing of The Official Black Spire Outpost Cookbook and prior to the destruction of Kijimi. It also establishes that The Ultimate Cookbook was published following the Festival of the Ancestors that occurred during that time period. Star Wars: Galaxy's Edge: The Official Black Spire Outpost Cookbook further establishes that The Official Black Spire Outpost Cookbook was published concurrently with the First Order's search for the Resistance base on Batuu, which Star Wars: Timelines dates to 34 ABY. In addition, Timelines dates the Festival of the Ancestors and the destruction of Kijimi to 35 ABY, meaning the tour must have taken place between 34 ABY and 35 ABY and The Ultimate Cookbook must have been published in 35 ABY.
