- "This salty fish cake sent my taste buds on a journey more epic than some five-hour song-and-dance routine ever could. And now that I can make 'em myself, I don't even have to put on a fancy suit."
- ―Strono Tuggs
Mon Cala Sardine Fritters were a type of flavorful.[2], salty fish cake made using sardines. They were edible by Artiodacs and sold in the Moncaladrome opera house[1] on the planet Mon Cala,[3] the planet that the dish was inspired by.[2] At some point prior to the Battle of Takodana, the chef Strono Tuggs won VIP tickets to an opera about the Faluvian cycle at the Moncaladrome in a game of dejarik. Although he found the first act unsatisfactory, he was served a Mon Cala Sardine Fritter as a canapé during the opera's intermission and enjoyed the food far more than the show, eventually learning to cook the dish himself.[1]
In 34 ABY,[4] Tuggs included a recipe for Mon Cala Sardine Fritters in his cookbook, The Official Black Spire Outpost Cookbook. He also included the story of his visit to the Moncaladrome and mentioned that he was pleased that he could enjoy the fritters afterward without having to put on a suit.[1]
Behind the scenes
Mon Cala Sardine Fritters were introduced in the 2019 cookbook Star Wars: Galaxy's Edge: The Official Black Spire Outpost Cookbook, written by Marc Sumerak and Chelsea Monroe-Cassel. The out-of-universe recipe calls for oil for frying, two tins of sardines, an egg, flaked seaweed snacks, a squeeze of lime juice, sesame seeds, a pinch of cayenne pepper, panko breadcrumbs, salt, and pepper.[1]
