- "Enjoy our basic omelet, made from three Grade Aurek garto eggs and filled with shredded jerba cheese, or add any of these favorite ingredients for a small charge: diced gornt, diced roba, Felucian glasscap mushrooms, Ferroan spinach, Bellassan peppers, Ojomian onions, topatoes or calarantrum root."
- ―Dexter Jettster, menu of Dex's Diner
Ferroan spinach was a type of spinach[1] that shared its name with the sentient Ferroan species.[3] Prior to its destruction between 19 BBY and 18 BBY,[4] the eatery Dex's Diner on the planet Coruscant included Ferroan spinach as an optional addition for its Gartro egg omelet for an additional five decicreds.[2] In 44 ABY,[5] the Humans Leia Organa Solo, Han Solo, Jagged Fel, Jaina Solo, and Tahiri Veila ate a meal in the Solos' safe house on Coruscant that included steamed Ferroan spinach.[1]
Behind the scenes
Ferroan spinach was first mentioned in "Dining at Dex's," a 2009 Hyperspace-exclusive article which was written by Gregory Walker and formatted as an in-universe menu.[2] It later appeared in the novel Ascension, written by Christie Golden and published in 2011 as the ninth installment of the Star Wars: Fate of the Jedi series.[1]
