Emulsauce was a tangy sauce.[1] Prior to its destruction during the first two years of the Galactic Empire's reign,[2] Dex's Diner, a restaurant on the planet Coruscant, made its Gartro egg salad fresh daily with emulsauce. The salad was then used in the eatery's Gartro egg salad sandwiches.[1]

Behind the scenes

Emulsauce was mentioned in "Dining at Dex's," a 2009 Hyperspace-exclusive article which was written by Gregory Walker and formatted as an in-universe menu.[1] Walker called emulsauce the Star Wars equivalent of mayonnaise in his StarWars.com blog.[3]
