Blue sprouts were a type of food that was edible by humans and blue in color.[1] In 228 BBY,[2] the humans Jordanna Sparkburn and Sylvestri Yarrow invited Jedi Master Mirro Lox and his Padawan, Amadeo Azzazzo, to a meal at a canteen on the Republic Defense Coalition mobile launch and repair station. For the meal's first course, the canteen's owner, the Iktotchi Pop Teeno, served the group blue sprouts and a stewed sweet beet.[1]

Blue sprouts appeared in the young-adult novel The High Republic: Defy the Storm, written by Tessa Gratton and Justina Ireland and published in 2024 as part of the Star Wars: The High Republic multimedia project's[1] Phase III.[3] Within the novel, blue sprouts appeared within a chapter written by Gratton.[4]
