Gonzo yellow cheese was a type of cheese enjoyed by the Besalisk Dexter Jettster and used in his restaurant located on the planet Coruscant, Dex's Diner, before[1] his diner was destroyed during the first two years of the Galactic Empire's rule.[2] One slice of the cheese was served on Jettster's Coruscant slider, a dish inspired by the eponymous planet and the time he had spent there. Pashi noodles, another diner dish, were served with Gonzo yellow cheese sauce.[1]

Behind the scenes

Gonzo yellow cheese is mentioned in a 2009 Hyperspace-exclusive release, "Dining at Dex's," which was written by Gregory Walker in the style of an in-universe menu for Dex's Diner.[1] The word "gonzo" is a slang term that exists within the Star Wars galaxy, one that acts as a positive adjective,[3] although only a nominal connection between the word and the cheese is made in Walker's work.[1]
