The Empire's defeat at Endor was heralded with much rejoicing, which led to the conception of many children.
Victory kid referred to the demographic generation[1] comprising the hundreds of millions—if not billions—of sentients who were conceived in direct response to[2] the Battle of Endor, when Emperor Palpatine was killed and the Galactic Empire began its fall.[1] The human Karé Kun belonged to that generation[2] and—although he was born two years before Endor[3]—Poe Dameron was also considered a victory kid.[1]
