I don't know when The Acolyte takes place, but having a flashback to over 1000 years before TPM would be a bit much.
Being able to call a lightsaber to her hand when just several hours earlier she had no idea what the force was and being able to lift several dozen boulders and still being at full strength is the sign of a very powerful force user, and she demonstrates the same power in the force in The Rise Of Skywalker, so no, she doesn't exactly grow.
She was overreacting and wasn't thinking straight. She had no struggles with learning how to become a Jedi, and could seemingly use the force when she had no such training. Beating a fully trained Jedi with absolutely no experience with a lightsaber is a reason why people don't like her. She starts out powerful with no training, gets things right immediately, and doesn't learn anything. How is TFA Rey different than ROS Rey?
The reason most people dislike her as a character is because she had no flaws in the films, and sure she got flushed out in the books, but the majority of the people who watch the movies won't read the books.

I think a book that is the same formula path of the Jedi, but does it a little better: The bounty hunter code. It's an outline of how to be a good bounty hunter in the Imperial Era and has an entire section written by Boba Fett at the end, but I haven't gotten to that part. I've had almost all the "Manual" books in the series for a while now, and I'm about to get the Imperial handbook. I hope you do the same.
