Yes wookiee children were taken prisoner because no matter how old you are, being a soldier leaves you liable to capture. We also can asssume these "Children" are at least teenagers based on their size.
Of course the rebels werent targeting civilians, (Mostly) but civilians
die in war, always.

The rebel alliance was a hostile force, and in any case the results were the same, as we saw in the Galactic civil war. The civilians of Japan were mostly peaceful as well. And the Alderaanian government was also funding war operations against the Empire.
Your third paragraph assumes what we are trying to discuss.
Palpatine did indeed accelerate the conflict, but (1) That conflict was going to happen anyway, and (2) he knew the Republic was too corrupt and unstable to deal with it, and such a war was the only way to stabilise the galaxy, and destroy the Jedi.
I also have more legends experience than Disney Canon.
I can agree with all of those as good things, and I imagine there are many policies you disagree with, but I have found it hard to justify a war on the Empire.
Of course first we must deal with the largest and most often used anti-Empire argument: the destruction of Alderaan. I personally do not believe this was Tarkin's lone decision, but a calculated and necessary action. Akin to the attacks on Hiroshima and Nagasaki, a show of force to deter a more devastating conflict. The death and destruction of the clone wars was still fresh in everyone's minds, and in order to avoid a repeat of that, Palpatine was willing to go to almost any length.
This is of course controversial, just as the atomic bombs were, but I believe it was necessary.

I mean supporting their rule of the galaxy. Certainly not everything they did was right, but it was better than the alternative.

The Death Star's goal was to prevent a second clone war, to avoid the deaths of billions and billions of innocent civilians.
I can see your point, but I would hesitate to label all of them as performative.
