After this i suggest watching all of the clone wars, maybe even watch the 2d version if your interested, and then the bad batch, then rebels and the mandalorian. Also, DO NOT watch the sequal trilogy. i have not seen them (except for the last jedi but i barely remember the plot), but as what other people have been saying, they're some of the worst pieces of star wars media out there. so do not watch them. if you want to get into the EU or Legends, while i havent read the EU books yet, i suggest playing Knights of the Old Republic 1 and 2, then Star Wars the Old Republic. While i havent played Knights of the Old Republic 1 and 2, they do tell the story of Revan i think (havent played them), and Star Wars the Old Republic expands on that story if you pick the Jedi Knight class, as the game's an MMORPG, while Knights of the Old Republic are RPG games. Also there is a subscription for Star wars the Old Republic which is $14.99 that unlocks all of the current expansions. However, even if you're not subscribed, you can still play 2 free expansions called Rise of the Hutt Cartel and Shadow of Revan.

Yea imo the jedi knight fits the most in being the "Luke" of swtor especially since they use him in pretty much every single expansion trailer and was prophesied by lord scourge to be the one to defeat Vitiate. But i havent played any of the eternal expansions yet, i've only gotten to shadow of revan but a lot of the things the Jedi Knight has done just makes sense for him to be the Outlander.

So I was watching a video about which lightsaber design is the best by Shadiversity, and when Shad was talking about Ezra's blaster-lightsaber, he talks about how the whole reason why jedi dont use blasters is stupid, because even if it's "so uncivilized," it can still be really useful. If the jedi dont want to kill, why not set the blasters to stun? Blasters do have a stun setting, so why not use that? And if it's about honor, well, I dont think honor is more important than getting out of a life or death situation. Also, Obi-Wan throwing a blaster and then calling it "uncivilized" is stupid. This man has been commanding and befriended people WHO USE BLASTERS for years, and he just call's they're weapon uncivilized. Wow.
