By analyzing this photo here, we can see that Cal is likely going into disguise, as you can get gunned down immediately for having a lightsaber hanging off your belt, and perhaps EA will take some inspiration from the 2018 Spiderman game dating back to 2018, so maybe Cal will have a few seconds until stormtroopers recognize his face, and begin attacking. We can also see that Cal also has a holstered blaster on his left hip, I think that EA may take inspiration from the God of War series and have Cal use multiple weapons, and use both his blaster pistol and lightsaber to his advantage, and perhaps you get an achievement for completing the game with only your blaster.

I believe the Jedi Survivor is Eno Cordova, as he is confirmed to have survived the fall of the Jedi Order back in 19 BBY (10 years before the events of this game)

Since Eno Cordova is CONFIRMED to have survived the fall of the Jedi Order back in 19 BBY, and the game is called Jedi Survivor, maybe Eno IS the Jedi Survivor, and he becomes a character in the game,
