IMO the episodes collectively really varied in quality.
My favorite is The Duel, chef’s kiss. Most of them were meh. Individually, they felt the same in quality. At first i struggled with S and A, but the rest were pretty clear.

The Duel honestly gives me early WandaVision vibes with the black & white environment and the red lightsabers. I thought that was awesome. Also the mystery behind The Ronin is spectacular. We really should see more of him.

Long Version: Mace Windu's lightsaber first appeared in Star Wars: Episode II Attack of the Clones, the second installment of the Prequel trilogy. The lightsaber's blade color was chosen by the actor portraying Windu, Samuel L. Jackson, who wanted a purple lightsaber because he was "the second baddest Jedi in the universe" and so he could find himself in the Battle of Geonosis scene.
Short Version: Cause it’s Samuel L Jackson’s favorite color, he specifically requested it
