We should take it into account that those in the Republic who wore royal titles were public servants, not a group of privileged few, occupying the top level of a hierarchy, prioritizing them over the others. The Senate we see in Episodes I-III is fallen to the dark side, basically, but many Senators were still embodying the ideals of the Republic and Bail Organa was one of them. Leia enjoyed higher quality life on Alderaan than Luke, but that was given in exchange for being raised to be someone who will prioritize her people and the whole galaxy over her own needs. So, Luke had a much simpler, but much less burdened life on Tatooine. So, I would say, it was balanced.

Firstly, Obi-Wan and Yoda didn’t exactly have many options of hiding two powerful Force sensitive children who were not only endangered due to their Force sensitivity but also due to their heritage. They were happy with any solution that seemed safe enough. And they also didn’t give up the children for adoption for funsies and luxury, they were primarily looking for a home for both of them that kept them save. So, the matter of whether putting only one of them in a place that‘s presumably more privileged than the other one was hardly their first priority which makes the wording of this question somewhat strange.
Secondly, Leia may have been brought up in a rich and prestigious family but this position made her also much more directly vulnerable and exposed to the Empire. There were much more opportunities for her to be hurt by the Empire in some way (which also happened, as shown in ANH) or for her identity to be revealed. She also had several grave duties to fulfill including being responsible for an entire people. Something that’s surely more of a burden than a privilege and something Luke didn’t have to bear.
All in all, Yoda and Obi-Wan had to be pragmatic and couldn’t afford to ensure that both children were raised in high-standing families. Not to mention that such a position also had much more potential to expose them and was, while offering more privileges, also more dangerous which seems contraproductive to the entire „adoption process“
Fair? Is life fair? Not really, it just is. Both kids grew up deeply loved, free, and with enough to eat. That's definitely a win.
All jokes and complex analyses aside, Luke and Leia were very lucky they survived their traumatic birth and weren't taken by the Empire and tortured into Inquisitors. Their separation (albeit into the first places someone smart might look) saved their lives. Also a win.
To protect them both from the Emperor they were hidden from their father when they were born. The Emperor knew as Obi-Wan did, if Anakin were to have any offspring, they would be a threat to him. That is the reason why they were separated at birth. However, I’m just saying I would be kind of upset if I was raised as a poor moisture farmer and I had a twin sister that was raised as a rich princess.

Yes and No, because there was no other choice at the moment and also it was for their safety. I think that there roles as children influenced their lives in the future.
Luke and Leia were written as a princess and a moisture farmer before they were written as siblings so Lucas had to make do with what was already there.
Luke’s original sister was supposed to be training somewhere else in the Galaxy in secret, and unknown to Obi-wan when Yoda says “no, there is another”. My guess is that she wouldn’t have been raised as royalty.
