The concept of Gray Jedi just seems like an excuse to let characters use the Dark Side without portraying them as evil.

Not necessarily. It can mean that they function outside of an order. The Jedi order had many flaws.

Dark Jedi. I'm not bowing down to the will of the force or a some Sith order.

That was a hard choice for me.

Gray Jedi do exist. It can mean any light sider that operates outside of the order and only follows the will of the force, or a Jedi that operates close to, but outside of, the threshold for falling to the Dark Side. There are definitely force users who attempt to wield both the light and dark side, but they are ignorant to the fact that this position is unsustainable and is actively causing them to slide further to the Dark side.
