Why not? join up, do a couple of years, get the training and equipment and then leave to become a mercenary or a Bounty Hunter.

But then you're more likely to die and get looted in some back alley or suffer a worst fate (such as Project: Blackwing) than die on a battlefield.

I would never work for the Empire

True, everything has it's risks but sometimes you have to take those risks for a better future. I understand the "but the Empire is so evil" argument and I would say... so? you have to think about yourself and your family. Every Government is evil, you have to think about what can you get out of it. Sometimes you have to be a little selfish, for example; if I need to feed my children and the best way to do it is joining the Empire, I would do it in a heartbeat. I don't think the Rebels pay well anyway ;-)

But what good is joining up with the Empire for some cash if you lose yourself in the process? The empire committed so many atrocities, and if you are willing to join up and create a tyranny that breeds fear and violence and division for trillions across the galaxy, you’ll lose part of yourself along with that.

Clone Troopers ended up working for the Empire anyway so I'd rather be a stormtrooper.
