Padme Amidala because of the symbolism of the scene. Padme's last breath occurred at the same time as Darth Vader's first breath...or at least in his fancy new black armored suit.
Han Solo's death was sad, and a shock at the time. However, after watching the Sequel Trilogy as a whole, it did feel like Solo's death was just something they decided to do for shock value, or at least Harrison Ford's wishes, rather than a compelling storyline. It did enhance Kylo Ben's character development, which is one of the few redeeming qualities of the Trilogy, but otherwise it was mostly tongue-in-cheek. Especially when, in the years of anticipation for the Sequel Trilogy, no one thought about having the OG cast reunite in the same room somehow. Granted, flashbacks and prologue scenes weren't a thing at that time, but still.
