Gotta be the Darth Vader hallway scene for me. I remember seeing Rogue One for the first time and when that moment came, I was silent. Darth Vader was like a horror movie character, massacring everyone in his way. It was the first time people feared his character in years.

^I disagree, it's a very good moment, but I think my Emperor blasting that Jedi scum with lightning is the coolest moment in all of Star Wars. Fry, Skywalker, fry!
...oh yeah, and there being no Vader screaming "NOOOO!" Lol But seriously, I don't take much issue against it myself, though that doesn't mean the silent Vader isn't cooler.
Bad joke aside, I think this scene was a pivotal moment. As covered in the Prequel Trilogy, Anakin fulfills his destiny as the Chosen One. And Vader being turned through his son Luke made him a legend, at least according to The Last Jedi the Sequel Trilogy. But of course I'm focused on the original prophecy presented in George Lucas's saga rather than Disney's nonsensical storytelling.

Probably now the best moment is when Ahsoka went into the World Between Worlds seeing Anakin, him giving her a final lesson where she revisited events from the Clone Wars which was a really great moment to me that made me smile
@Unknown Follower Oh yes, that remains one of my top favorite moments in The Clone Wars, if not my favorite. Pardon my French, but you know sh*t is about to get real if Sidious comes. My only issue is that we next see Maul escaped and having set up Crimson Dawn - and yes, I know we had the Sons of Dathomir comics, so at least we have the story in some shape and form, but I would have liked to have seen them as episodes. But I digress. Sidious fighting with two lightsabers was unreal, but it did make sense, or at least explain Sidious's use of lightsabers in Episode III...granted he could have simply made another one in between his duel with Mace Windu and Yoda, but the idea of the Dark Lord having two is just too cool to ignore.
