I wouldn’t say Pershing is evil. Considering of what happened in the Mandalorian S3 E3.

Pershing got a bad fate. He didn't deserve to be mind-flayed. In Seasons 1 and 2 Pershing was always so scared of everyone, probably because he lost his mother when he was young. Galen Erso was forced and literally created a weak point for the Death Star to be destroyed.

Only one of these characters actually fits the description of a full on evil scientist imo.
