In-Universe Aging: For characters like Grogu, who was in training with Luke Skywalker, the visible changes and advancements in skills point to a time span that cannot be accommodated within the same year as the end of The Mandalorian Season 2. This holds true for other characters like Din Djarin and Bo-Katan Kryze, whose arcs have shown a level of development that necessitates a more extended period than what 9 ABY would allow.
Creator Statements: The most unambiguous evidence comes from the creators themselves, who have explicitly mentioned that a two-year span has elapsed between The Mandalorian Season 2 and The Book of Boba Fett. This alone should be sufficient to move our dating to at least 11 ABY.
