I feel like it would be cool to see a movie or tv show about a underground fight club for force sensitive, former sith, former jedi to battle it out during the years of the empire rand by some crime boss LIKE Jabba the Hutt I’m not saying Jabba the Hutt just someone similar to him.

It already has in print although not hugely underground. Grakkus' Arena features in Marvel SW 2015 around #10. Would be great to see a live action version.
I would like a show about some force sensitive girl who has to get her little siblings to safety cuz they are all force sensitive and in order to get to safety she must win a championship or something I was thinking new ideas and NO main characters from the Skywalker saga should be in it

Could work, but the Jedi couldn't remain at one for too long or the inquisitors would pick up their trail. There could be multiple underground arenas and fight clubs and the jedi could be near legendary fighters who no one knows when and at which club they will show up to participate, but there presence always draws in a crowd. Heck, an impromptu duel between a rouge jedi and an passing inquisitor could be the highlight of an evening at a club
Perhaps a dirty inquisitor runs the place and losers die
