Legends Luke is definitely my vote. From being able to use the force to heal himself to telekinetically being able to sustain a black hole, Luke’s abilities in the force continued to grow as he rebuilt the Jedi order throughout legends.He was also able to use the force mind meld technique. That’s how he and Mara came to realize they weren’t meant to be together.
I voted for Luke as well, but I also find Darth Caedus very fascinating. Particularly after the Yuuzhan Vong War, he spent five years learning several unorthodox Force techniques from different Force using groups like the Baran Do Sages, the Witches of Dathomir and the Aing-Tii monks
