If you wanna get caught up on the canon maybe clone wars first. However I strongly encourage you to watch the mandalorian it kicks ass overall

For starters, I'd recommend Mandalorian- not too long, not too short.

Then, go for the main course: THE CLONE WARS- seven seasons of tragedy and triumph!

For desert, you have Bad Batch- a nice little accoutrement, unnecessary but very pleasant.

And for a cheese platter, you have Boba Fett- a baffling mixture of the delightful and the disgusting. Enjoy what you will, though you may be left with a bad smell afterwards...

I'm not the biggest fan of cheese in general but I could be persuaded to give it a try, especially since there are some types of cheese I like. Mando or Clone Wars. Clone Wars completely changed my opinion of the prequels for the better.
