What if during the Bombing arc Anakin didn't make it in time to prove Ahsoka's innocence, and Barris's guilt. Would Palpatine have actually executed Ahsoka despite knowing how much Anakin cares about her, or would he actually spare her in order to keep Anakin on his good side, until he need Anakin to become Darth Vader?

Ahsoka was one of the main members of Anakin’s surrogate family and she was also one of Anakin’s main anchors to the light side of the force. I feel like Palpatine was just sitting back and enjoying the Jedi council prove their ignorance. He’s been working on convincing Anakin that the Jedi council doesn’t trust him and what better way to prove it then allowing them and the senate to hang Ahsoka out to dry even though Anakin constantly told them she was innocent. I have little doubt that Palpatine would’ve been more than happy to rid Anakin of one his main emotional connections in order to make him even more volatile and fragile.

Interesting question. On one hand, I don't think Palpatine would skip a chance of nurturing Anakin's darkness and making the Jedi look bad to him. No doubt he would have later said to Anakin something along the lines of how he really wanted to prevent this tragedy but wasn't able to because he was put under immense pressure. Also, it might look suspicious if he refused to sentence Ahsoka despite her being "proven" guilty. Though I guess he could find ways to slow down the trial.
On the other hand, as you say, Ahsoka being actually executed could have evoked Anakin's Sith Lord a lot earlier which might have led to him being excluded by the Jedi Order and to Palpatine's plans regarding Anakin being endangered. I suppose Palpatine could have still tried to recrute Anakin and somehow get rid of Dooku but it would make things more complicated for him.
All in all, I suppose Palpatine would be more careful in this regard and might try to spare her in order to, as you say, encourage Anakin's growing darkness in a more controlled way. But it's a good question
The whole threat of execution was a plot hole to begin with. The Republic didn't even have capital punishment before the Clone Wars, and during them it was reserved only for clone troopers deemed failures by firing squad.
You're telling me that inferior aliens like Jabba's weird uncle go to prison for false flag operations to bring trade routes into open conflict, but a near-human gets executed for a single bombing? Not buying it.

I mean in Clone Wars (Season 7) we did see Rex try to kill Ahsoka but he didn't succeed because she was able to escape.
So he didn't get her
