It depends hugely on the place Luke holds in each of our experiences. For me as an OT kid, Luke was a bit of a boring goody-two-shoes and (I'm so sorry Mark) not well acted. I was much more a fan of Chewie, R2 and Leia.
I read the Thrawn stuff and Dark Empire, Rogue Squadron, other bits, on release, which I loved. Then I lost interest in anything other than screen whilst I was at college and Uni.
I read much of Legends when I returned to SW after I'd settled down and it didn't age well for me. None of it seemed to be a patch on what I read while I was a kid. So Luke from Legends has never had the same hold on me as for some SW fans.
I think had I carried on reading Legends whilst I was younger, Luke would have mattered more.

I did read them but when I was older. They just didn't seem all that good. Some highlights, yes but they were mostly functional franchise fiction. Mechanically milked cash cows.
^I definitely agree that Denningverse Luke was terrible and nothing special, definitely a case of milking (going so far as to occasionally imply 120 years old was the new retirement age and 150 was when humans became too feeble, so we could have decades more Luke). But Zahn verse Luke and New Jedi Order Luke overall was incredible.
Don't get me wrong, it wasn't perfect. Early New Jedi Order was just let's keep Luke out (like the Mara gets sick plotline) so all the pressure falls to the Solo kids. Rather than them complimenting each other. That said, overall, Luke Skywalker was handled very well here. In New Jedi Order series for instance Luke Skywalker is realizing he's getting old in his 40s and it felt far more natural. It literally ends with a passing of the torch from Luke to the Solo kids... that Denningverse then repeated like 7 times but then walking it back because again, 120 was retirement age.
None of this is going to happen if Lucasfilm continues to use "de-aging", CGI, etc. with Luke. I love Mark Hamill to death, but if a young Luke is going to have any real emotional appeal onscreen, he will have to be re-cast with a new actor. At first I was hesitant because Mark H. is Luke period, but I think for the sake of believable dramatic performances, I am now okay with it.
I do feel the pain Legends fans have with regards to Luke. I took a huge SW hiatus when I was young, so I do not have two decades worth of Legends Luke instilled in my SW consciousness. Unfortunately, I just don't see a "Legends inspired" Luke in a Disney/Lucasfim era that will please the more purist of Legends fans. I think it may be more realistic to find a billionaire private donor, and make one hell of a fan film.
As for Canon Luke, I have my personal likes and dislikes, but at this point I can only wait and see what happens. In whatever way Luke is contextualized further in Canon, I would be very surprised if Lucasfilm does not bring in a new Skywalker kid(s) for a post-TROS story era.
Yes I would like to see Luke Skywalker get his own Disney+ series
I do not wish to see Disney do more CGI to make Mark Hamil younger.
It's not too interesting what happened to Luke after the OT, because his arc was continued in the ST.
I'd rather see a totally new story around a new character set in the Star Wars universe. Known characters like Luke could be in the periphery, but I'd really rather have that than them shoe horning yet more lore into the same tired old characters' arcs. And risking adding story bits to their life that contradict earlier movies.
