I’d imagine he’d be the way he was with Ahsoka with them. AOTC and CW Anakin seemed like a pretty fun guy, he reached his darkest in ROTS.
Believe it or not there’s a legends comic series called Darth Vader and the Lost Command where Vader imagines what his life and fatherhood would’ve been like if everything had turned out alright. He’s essentially having dreams of Padme and their son who’s named Jinn Skywalker in his dreams. If you want to see a couple of what if scenes of the Skywalker family without the ROTS tragedy then I highly recommend these comics. After reading these comics I firmly believe Anakin would’ve been an amazing father.
He killed kids so, it’d be a good reminder for Luke or Leia whenever they need to be disciplined.
I’d say he’d be a reasonably good father, even if he’d be on the strict side.

I don't think Anakin would have been a good father. His obsession with Padme (to the point of killing so many people just for the chance of saving her) was not a healthy thing and most likely would have been detrimental to his relationship with any children.
Interesting question. I think he would have cared for them and tried his best to support them, but like Shambala108 says, he would've probably cared "too much" about them to the point of becoming overprotective of them, seeing how possessive he was of Padme in the end. His fear of losing those close to him might have overshadowed his relationship with his children.
I imagine him and Leia would've clashed a lot, especially in regard to him being overprotective (which is all hypothetical, of course), seeing that both are stubborn and (somewhat) hotheaded; not to mention that Leia seemed to be of an independent, rebellious nature (not unlike her father) which would've made Anakin probably both proud and frustrated
