Well, the best in legends is Soontir Fel, he is considered the best pilot in Star Wars, unfortunately he not known by many in the fandom.

^I'd argue Soontir Fel was the best until Luke achieved Jedi Masterhood. I mean, Fel was able to beat Vader. So automatically, it can't be Vader in Legends. That said, once you got into New Jedi Order Luke is gets so good, he's practically able to wipe out fleets by himself. Even all of Soontir Fel's competitors and near rivals acknowledge Luke is the best in the galaxy and his niece Jaina Solo (later a Fel because he married Soontir's son) is the next number 2.

Plus Soontir lost an eye and lost his depth perception with it.

I’m also not a sequel fan and I’m saying that

Anakin, even though everything he flew was doomed to be a hunk of junk.

Its no secret that Anakin is the best pilot but Plo comes pretty close as well
