Non force sensitive all the way, they are pure hard work and skill
If I have to choose just one, I would say force-sensitives, but what I really like is a mixture of both.

I like character who is Force Sensitive
I mean I thought that is always cool. Because while they aren't Jedi, it allows characters to have the Force. It was cool that Finn was Force Sensitive same with Leia. Now while Leia had training from Luke, she didn't become a Jedi. As for Finn he was planning on becoming a Jedi, but that didn't happen. But I believe being Force Sensitive is a creative concept.
Doesn't matter for me, just depends on their character
If you ask me, I prefer clones, Mandalorians, and at times bounty hunters, moreso than Jedi and Sith. I feel as if the aspect of being force-sensitive is overused.
The Force and its followers are the most interesting concept of SW to me, so, I generally prefer to explore the stories of force sensitive characters. I find it interesting to follow their journey on how they use the Force, how they handle their powers, how they overcome obstacles etc.
However, I also like non-force sensitive characters; and movies like "Solo" or "Rogue One" are also a refreshing chance from movies with force sensitive protagonists. Though even in those cases, I like it if the Force plays a certain role
Overall, I tend to be slightly more interested in Force-sensitive characters by default, as they're part of the unique lore of Star Wars, and I find it really interesting to explore their abilities and relationship with the Force and how it affects them. However, I also appreciate non-Force sensitive characters, as they help ground the universe, and can be even cooler characters in their own right, able to reach similar heights even without special Force abilities. In the end, Star Wars just wouldn't be as great as it is without such a variety of characters and abilities, imo.
Force sensitives for sure. The force is an element of of Star Wars that’s pretty key so having force sensitive characters gives us access to that element of the lore
Cassian Andor, Jyn Erso, Hera Syndulla, Din Djarin and Han Solo are examples of well written im glads thats the focus with The Mandaloiran And Grogu as well Star Wars Starfighter . The Jedi need to be grounded in Reys New Jedi Order as well Dawn Of The Jedi if they are to regain favor for me. Yeah The Acolyte had a great ideas but fumbled them grounding the Jedi , Skeleton Crew did it better with Jod Na Nawood making him barely a novice user.
