If it was purposefully done, they wouldn’t have made it a two year gap. While the Jedi were trained from very young ages, I’m not sure they were actually trained at two years old, and the Sith definitely didn’t take apprentices at that age.

As a two year old? That seems highly unlikely.

Most two year olds can’t even walk, form sentences or show empathy or any social skills for that matter.

Much less being able to conceive what the Dark Side is.

No. It’s not part of the Sith’s dogma (nor ever was) to pick Force Sensitive toddlers. The point of recruiting older beings has always been due to their life experience and the emotions they developed through that time that can be used to harness the power of the dark side. Always remember that the Sith philosophy is primary about one’s living by their negative emotions as their way of life and using that as their font of power. There are exceptions of course, like Maul, but overall they start their apprenticeship as pre-teens or teenagers, or already full adults, like Bane.
