Assuming a droid- like R2- has had his restraining bolt removed. Do you suppose a droid might one day decide they don't believe in the cause their working for, and just decide to leave the Rebellion for the Empire, or vice versa?

Depends on how restrictive their programming is. But probably not because most owners and manufacturers don’t want their droids getting any ideas.
Although if a droid can “break free” of their programming maybe they could switch sides. There was an instance of this happening where a droid was hit in the head during battle and joined the Republic.
