For one, it's a fantastic world that serves me, from time to time, as an escape from reality. The characters, the setting, the whole Force stuff, the music as well, all of them are great "ingredients" which capture my mind and basically take me into another world.
Though at the same time, I enjoy discovering messages, learning from the stories SW tells, particularly from the movies. I like particularly Luke's arc in the OT and Anakin's arc in the PT, for example. Both of them are characters that I can learn from. I'm personally also intrigued by the Jedi's philosophy and try to apply at least some of their moral values in my life.
So, SW is, to me, for one, a universe with amazing, incredibly entertaining stories. At the same time, it also serves as life lessons to me, to a certain degree

I’ll be a little more cliche and say hope.
It shows us that even though it seems the entire world is designed to brutally subjugate and enslave you, that you can hope to find others willing to stand against it.
It shows us that even when our closest friends and loved ones fall down the rabbit hole, there’s hope we can pull them back out of it.
It even shows us that in the face of our most primordial fear of the dark that we can be the beacon of hope against it. Be that light, piercing the dark and illuminating it to show us what the truth of reality is: nothing for us to fear.
It means fun adventures in space with a couple wizards along the way.
I know it doesn’t sound like a lot, but it is to me.
