I don't think I have a single favorite scene from each trilogy, so I'm just going to list a couple of those I like the best..:
PT: the Podrace in TPM; Anakin and Shmi's farewell-scene (TPM); Qui-Gon and Obi-Wan vs. Maul (TPM); Obi-Wan vs. Jango (ATOC); the arena battle (ATOC); Mace vs. Sidious (ROTS); Yoda vs. Sidious (ROTS); Anakin's transformation to Vader (ROTS); Padme and Obi-Wan confronting Anakin, now Vader (ROTS); Luke and Leia's birth and their assignment to their new families (ROTS). And all of the scenes where Palpatine manipulates someone
OT: the whole break-in and escape from the Death Star-scene (ANH); Luke's first meeting with Yoda (TESB); Luke's Jedi training on Dagobah (TESB); Luke's confrontation with Vader on Bespin (TESB); the final scene in TESB where Luke puts his arm around Leia and they stare into space; all of the scenes with Luke confronting Palpatine and his father (ROTJ); Leia and Han finally clarifying their relationship status on Endor (ROTJ); the celebration at the end of ROTJ. Also generally Leia and Han's banter
ST: Finn leaving the First Order with Poe (TFA); Finn saying farewell to Rey only to run back when she's being abducted (TFA); Finn and Rey meeting Han (TFA); Han and Leia reuniting with each other (TFA); Finn leading a rescue mission for Rey (TFA); Han confronting Kylo (TFA); Finn and Rey fighting Kylo alongside each other (TFA); Luke sacrificing himself when confronting Kylo (TLJ); Threepio sacrificing himself (TROS); Kylo "seeing" his father's memory, his connection with his mother, and him returning to the light (TROS); Rey returning to Tatooine (TROS)
Prequal: Vader’s anointment- Anakin’s traumatised reaction to his attack on Mace, & yet finally resigning himself to the dark side, nicely sums up the process seen across the whole prequel trilogy of how Anakin eventually fell. Seeing him named Darth Vader before getting his suit reminds us all that becoming Darth Vader is more than just ending up in an intimidating suit, but a spiritual fall. And it also the moment that firmly cements Emperor Palpatine’s place as the main villain of the franchise- deep down, we all consider Vader the main bad guy over the Emperor, considering that in the originals we didn’t clearly see the Emperor till the halfway through ROTJ. This scene, following his slaughter of the Jedi, is really where he earns his part for me.
Original: Death of Palpatine- Much harder decision- no one scene really stands out, it’s the whole trilogy together. But I guess as Vader throws the Emperor to his death. Not only the death of the bad guy, but also the redemption of Vader, whom we barely thought redemption was possible for. But as Vader watches the Emperor die, I imagine his return to the light is bittersweet, as more than anything he wishes he did that 20 years ago as he should have, and saved himself and everyone else so much pain and suffering
Sequel: End of TROS- Not saying it as a hater (lol). At the most basic level of reasoning, Rey was portrayed as the underdog throughout the movies. Burying the lightsabers represents her closure & moving on from her painful past, & having built her own lightsabre shows the open possibilities of her future. We all feel good for Rey at this point. However, there’s more than that for me- the sequels are a trilogy with a new generation of heroes. For those of us who loved the original Star Wars, its hard to know that we won’t be seeing Luke, Leia or Han ever again. Not only is this open sort of end a possibility to us of a future for Star Wars, but Rey taking the name Skywalker shows there will always be a link to the themes that made Star Wars what it is, even if the people who originally made it aren’t there anymore
I forgot a scene I liked a lot - the one in ANH, where Threepio manages to hold off the stormtroopers on the Death Star. He seemed more competent, helpful, and caring in this scene than in most other parts of SW (I like Threepio in general but sometimes he's a bit unhelpful and/or can get on other people's nerves)
PREQUELS: Duel On Mustafar.

OT: Luke leaving Dagobah.
TT: Luke and Mara on the balcony.
In the originals the best scene is Luke v Darth Vader. The one in Empire Strikes Back
Prequels: The best scene is Obi wan v Anakin
Sequels: The best scene is the lightsaber battle in the throne room in The Last Jedi, even most most of that movie was just MEH.
