Welcome to the second episode, or part, of a history of canon lightsabers. Here, I will list three lightsabers and include a brief history, as well as my thoughts about them. I had previously listed four, but as another has shown interest in helping with this series, I've decided to hold off to leave the options open.
These are in no particular order, as I can't quite list a favorite and will be added based upon random choice. I'll scroll through the personal lightsaber category and pick a canon lightsaber that catches my attention at the time.
In this episode, I've decided to include lists of notable episodes that said lightsabers were featured in. They will not likely be complete lists, but I will add a few notable uses.
Also, I do know that this information is accessible on Wookieepedia, but I want to bring this information to the people who have discussions here with an easy and information post so that they don't have to search out each individual article unless they'd like more information on a particular lightsaber.
Darth Maul's double-bladed lightsaber
A red double-blade lightsaber, this is the lightsaber that saw the end of Qui-Gon Jinn. Also used in battle against Obi-Wan Kenobi, Darth Sidious and later Ahsoka Tano, this weapon was sliced in two by Obi-Wan during the Battle of Naboo.
Later repaired with a new second half, this lightsaber was last seen during the Siege of Mandalore, where it was lost against Ahsoka. This lightsaber has been featured in various media, including Star Wars Battlefront II, where players can play as Darth Maul and wield this lightsaber.

This is a classic lightsaber. The first canon appearance of a double-bladed lightsaber and the first live-action film appearance of a double-bladed lightsaber in Legends. Though it was known lightsaber type in the franchise before Star Wars: Episode I The Phantom Menace, that was the film that made it famous.
A single-blade amethyst lightsaber with a hilt of electrum-plated alloy, Mace Windu's lightsaber was carried with him throughout various major events, including the beginning and the end of the Clone Wars. This was also the lightsaber used to behead Jango Fett, the father of Boba Fett.
Lost after a duel with Darth Sidious, it was lost after Anakin Skywalker betrayed Windu and joined Sidious. It is debated who the true victor of the duel was, but Windu was the only surviver of four Jedi who attempted to stop Sidious' plans to begin an Empire.

One of the first times that I ever saw an amethyst lightsaber, this one is quite memorable. I've heard that Samuel L. Jackson personally asked George Lucas for the blade to that color, as well. The hilt's bottom end reminds me of the Skywalker lightsaber, complete with gold and an interesting design.
Obi-Wan Kenobi's second lightsaber
I mentioned this lightsaber in the first episode. A replica of Obi-Wan Kenobi's first lightsaber, this one was created after his duel with Darth Maul on Naboo and is a single-blade blue lightsaber.
Kenobi used this lightsabers on various different journeys with his apprentice, Anakin Skywalker and used it to face down Jango Fett. It was taken from him by the Geonosians during his capture in 22 BBY.

Thoughts
As his first lightsaber was one of my favorite designs, this lightsaber used by Obi-Wan Kenobi would also fit into that category. I'm sure that many fans felt that this was indeed the same lightsaber. Definitely a classic, especially to many prequel film fans.
